Leftover Valentine’s Day chocolates are a delicious opportunity to get creative. Use them in smoothies, as an ice cream topping, or make homemade choco spread or bark. Chocolate marinades are a new culinary trend for adding richness to meats. The trend is gaining popularity as chocolate can add savoury notes to dishes. It can be infused into butter or cream-based sauce to create a gourmet touch in both sweet and savourful recipes, says Muskaan Lodha, head chef at Lavender Gifting and Desserts. The possibilities are endless, says Shikha Jain, founder, Crumb & Co. The best way to use them is to melt them down for a decadent fondue, or chop them up and add them to cookies, brownies, or even muffins. They can also be added to chilli and mole sauces for a rich unique twist, says Gopal Sethi, executive chef at Lucky Tigerr. They’re great for cake fillings or ganache too, says Swati Arora, founder of Sugar Story.
